ELECTRIC AVENUE & SUMMER COCKTAILS P 2

“We gonna rock down to Electric Avenue…” I was singing to myself whilst scouring the market at…Electric Avenue in Brixton. I was on a mission to find the juices, tropical fruits for our planned cocktail party that evening. I couldn’t help but to feel transported back to the Caribbean- the music, the food (make no mistake, Brixton market is THE place to eat nowadays and it’s home to a cuisine from all over the world), the sun- although, sadly it was down hill on that front from Sunday. After a Caribbean themed lunch (because who can resist a spicy and succulent jerk chicken) it was back to the house to prepare for the party.

The cocktails were so delicious, that I wanted to share the them with you. So here are are promised recipes for three fabulous summer party cocktails. I hope you will enjoy them as much as we did!

1 Pineapple and Mango Rum Cocktails
Serves 6

PINEAPLE AND MANGO RUM COCKTAIL-2

Ingredients

250 ml of good golden rum
3 small ripe mangoes, 2 ½ peeled and cubed and ½ mango cut into slices with skin, for garnish
½ of fresh pineapple peeled and cubed
½ Lt of fresh tropical juice
Raspberries and fresh mint, or fresh tropical fruit, such as dragon fruit, mango, and starfruit, for garnish
Ice
Blender
6 long Collins glasses (about 200 ml)

How to make it

Put the mangoes, rum, pineapple and about 100 mil of tropical juice in a blender and wiz it all until smooth icy slosh. Fill glasses with the icy puree up to two thirds of the glass and top up with of tropical juice juice. Gently stir with a long spoon. Garnish with raspberries and mint or tropical fruit.

2 Watermelon margarita
Serves 6

WATERMELON MARGARITA-3

Ingredients

850 grams of cubed seeded watermelon (about a ½ of a medium sized one)
250 ml of tequila
2 tablespoons sugar
50 ml of fresh lime juice
50 ml of Cointreau (orange-flavoured liqueur)
Lime wedges or watermelon balls to garnish

6 tumblers or martini glass
2 teaspoons sugar
1 lime wedge

Blender
Ice

How to make it

First prepare your glasses. Put sugar in a saucer, rub the rims of glasses with a lime wedge and then spin rim of each glass in sugar to coat. Set prepared glasses aside, preferably in the fridge to chill.
Put the watermelon, lime, sugar and alcohol in a blender process until smooth, add some ice (almost to the top of the blender) and process all again until all ice is smooth and combined with the rest of the ingredients. Fill each of the prepared glasses with the margarita mix. Garnish with lime wedges or melon balls and enjoy!

3 Strawberry Smash Cocktails with Tarragon
Serves 4

SRTAWBERRY SMASH WITH TATAGON_

Ingredients

For the tarragon simple syrup
100 ml of granulated sugar
100 ml of water
A handful of fresh tarragon leaves

How to make it

Tarragon syrup.
Add the sugar to the water in a small saucepan over medium heat, stirring until all the sugar has dissolved. Add the tarragon leaves and then take it off the heat, and steep for 10 minutes or more. Let it cool down and strain. You can store it in a glass jar in the fridge for some time so if you like this cocktail recipe, next time make more of the syrup and have it ready for the next party.

For the cocktails

10 large strawberries plus 4 for a garnish, sliced
1 lime cut into wedges
Juice of 1 lime
200 ml of good 40% vodka
A handful of fresh tarragon leaves, very finally chopped plus some whole leaves for garnish
25ml of tarragon simple syrup

Shaker
Ice
Glasses – martini or tumblers

How to make it

Add the strawberries and all but 2 of the lime wedges to the shaker. Use a muddler or the end of a wooden spoon to smash the fruits into a chunky mixture. Pull out the smashed limes, and then top up the mix with ice, the lime juice, vodka, and the tarragon syrup. Shake properly and taste it. If it needs more lime, syrup or vodka add some and shake it again. Strain into ice-filled glasses and garnish with strawberry slices, a lime wedge, and a sprig of tarragon.
